There was quite a choice strawberries, plums and even some damsons, but they also had lots of cherry tomatoes going for a song! Last year I made some chilli jam, which my son was very keen on, so this is what I decided to make.
The recipe is taken from Delicious magazine
- 2 tsp cumin seeds
- 2 tsp coriander seeds
- 750g ripe cherry tomatoes, halved
- 2 onions, finely chopped
- 2 fat garlic cloves, crushed
- 2 large mild red chillies, deseeded and finely chopped
- 5cm piece fresh ginger, grated
- 250ml white wine vinegar
- 300g soft light brown sugar
- 2 tsp fish sauce (nam pla) or soy sauce
First of all I took the cumin and coriander seeds and heated them gently to bring out the fragrance, they did smell good! Then I crushed them in a pestle and mortar.
All the ingredients were then added to a pan (I used a wok) - what a glorious colour.
Then simmer until a jam-like consistency is reached and add the fish or soya sauce and cook for a further 2 minutes.
Take off the heat and spoon in sterlised jars and seal when still warm.
Serve with cheese and oat biscuits. It did taste good!
